I suggest making a map for your friends to play on, X-ray glitch to find mob spawners since we can't make our own yet, and then make some challenging dungeons.

Try going into Survival Mode on Hard and only doing certain things a day. Such as you can only mine at night, eat 3 times a day, etc etc.
Try coming up with your own challenges to keep your interest.
