I prefer the water elevator, as it's simple, uses easily available materials, and is safe. The design I use is a 1x1 empty column, alternating signs/trap doors and water, every other block.
I built a spiral piston design that usually works. It's cool and slick and neat, but Rube Goldberg for the job it's doing and the amount of work it took go avoid climbing 30 steps. I like it
Does anyone have either a very efficient design or a ludicrously complicated but working method for not taking the stairs? (pics not required)
You can use the Minecart method. I built that in my first map to get from my mine to the surface quickly, Very simple, hidden design, works just like the water one, but you don't need as many signs/water sources.
