New version for Xbox says MOBS like cows and chickens will not despawn. Now does this include if you travel a long distance from the penned up animal?

How do I get pumpkin seeds?
Cocoa beans, can they only be found in dungen chest still?
Also been having a helliva time finding sheep, though I have cleared tall grass and keep killing wolfs. Any suggestions?
Pumpkin Seeds right now can only be found in Abandoned Mine Shafts. In the 1.8 Bug Fix coming soon, you will be able to craft Pumpkin Seeds from Pumpkins themselves.

Sheep spawn very often in Plains, the big open fields with a lot of grass. Move away from Taigas and Forests because those are the only places Wolves spawn. If you move far enough from them, Wolves should stop spawning for a while, leaving plenty of space for things like pigs, sheep, cows, and chickens.
Mustache has answered all your questions, so I'll throw in a little fun-fact that is related. If the mechanics match the PC version, animals will stop moving once you're over (I believe) 32 meters away from them. You can use this nifty little feature to create things like completely undetectable traps, using mobs and pressure plates as some sort of proximity detector.
