I have tons of abandoned mineshafts and diamonds and ravines (including a quintuple one) but no villages. Just a solitary well. Tons of monster spawners, though.
But I want a village. And I haven't found a stronghold ever. D:

Strongholds are indeed hard to find. According to different sources, there are either three per world as in the PC version (that's what the Minecraft wiki says), or only one. Considering that the world is a lot smaller in MC360, I wouldn't be surprised if there indeed is only one stronghold per world.
As for villages, they need rather flat areas to spawn; the areas don't need to be absolutely flat, but the flatter the better. That's also the reason why villages appear much more often in deserts than in any other biome. So if your world has only a few and/or small flat areas, it'll be hard and sometimes impossible for the game to find a place to put a village. However, partial villages, i.e. only a couple of buildings that often are literally cut off and appear unfinished, sometimes spawn in or very close to the water at the edge of the world. That can be useful if all you want from a village is a few free resources like wheat, wooden planks, wool (from lamp posts), or torches.
I've started several seeds (just as a test - flying over them and deleting them) since the update came out, and there have been a very few that haven't had a village. Some of the worlds have large ocean biomes and no deserts or plains areas; so these sorts of worlds tend not to have villages. Other worlds have large deserts and/or many plains areas; and I've seen as many as 7 villages in a single world.
If you're looking for a specific type of worlds, I would either pick one from the new Seeds list (found under the pinned "Important Threads" topic) OR start a seed first in creative mode and fly over it.
IF you then decide it's what you're looking for, but want to have leaderboards to stay active, you can: 1. Save and Exit (ETA: changed order per Tamorr's comment). 2. If you've used a random seed, start loading the world again and write down the seed number string from the load menu. 3. Back out of and select the save options (at the bottom of the screen) in order to delete the "creative" version of that world (if you don't want to wind up keeping 2 copies of the same world). (Per Tamorr's comment, keeping both copies until you at least confirm that you do have the same world is a good idea; but then be really careful about which one you eventually delete) 4. Start it as a NEW WORLD world in survival mode by manually typing in the seed string you wrote down. You will then have a seed that you've flown over that has not been loaded in creative mdoe and the leaderboards will still be active for that world.
PS: If you're inclined (admittedly, this is a bit of cheat), you can keep both copies of the same seed and use the creative mode one to locate the underground features, such as a stronghold, more quickly and test out build ideas on the same terrain as your survival world (without having to first collect and then potentially waste your survival resources).

This is a new world. The seed is Dungeon. There are a lot of hills, and a pretty big ocean. Oceans look cool, but I'm not a fan. Until we get something like a scuba suit where I can breath under water. lol.
Neat, my post magically disappeared. What a whimsical place this is.
I have been ditching any world without villages. I don't care about leaderboards so I just go ahead and check it first in creative. I am not getting invested in a world that turns out to have no cool stuff, not again. My first world ended up not having any snow biome, no ice, no dark wood. That's my favorite type of landscape! (I did have enough clay to make a small brick house, make the main floor of my fortress all brick, and make a super long walkway all out of brick, though.) The first few worlds I started after the update had no villages... I have the worst luck with seeds! But for some reason it feels like cheating to me to use someone else's seed (and I didn't even feel bad about duping when I wanted to make an iron and gold building).
