DJ is right, you want something along the lines of this
a piston gravity trap. they spawn on pressure plates which activates the piston pushing them off the ledge. But yeah you might have a problem with the enderman picking up the blocks. "Furnaces ftw"
My mob trap actually gets an occasional endermen.ive had about 10 so far. the fall and take damage in water then teleport back up and repeat the process until they die.
But my mob trap isnt made for them, i just get them

But they can teleport. The only thing they cant teleport out of is obsidian and pistons cant move obsidian.
