Apples have about a 1 in 200 chance of falling. Sometimes I chop down a tree and get 4 apples. Sometimes, I get none. It's just random chance.
I've been wondering, do apples still fall from pine, or dark wood, trees? I've not found enough to thoroughly test it, but i am yet to see it in the few trees I've chopped. I've had plenty drop from Oak (normal wood) and Birch (white wood) trees, though. They've dropped enough that I've been planting them in 5x5 rows as apple orchards in my new survival map.

Is it better to let the leaves go and drop on their own when cutting down a tree or to "cut" the leave (not with shears) to have better luck getting apples.
Also, will the leaves grow back if I "cut" them off with a Wood axe?

You only find melon seeds in mineshaft chests.
