I started building an ice castle a long time ago and finally "finished" it before the update. I have not gone into this world yet. I am scared. My world is/was 90% snow and ice. Could the weather be different? If it is, my snow and ice will not melt without being broken or heated up by the various ways right? I will be bummed if the weather changes unless there is ice in the creative mode...
Biome shifts don't melt snow and ice, but if you break or melt it, it won't come back (unless you place ice in creative).
There is a very good possibility that most of your snow biome will shift into non-snow biomes.

Also, snow doesn't melt at all, strangely enough. I've even dumped lava on snow blocks, no dice..

Snow blocks are hilariously immune to lava and fire. I'm not sure they were actually intended to melt. If they were, the functionality sure wasn't added!

I don't think they were meant to, but it's still amusing. Especially when the sheet of snow blocks are destroyed with the slightest of ease. When snow is compressed it gains magical immunities to any level of heat. Yet, it still breaks almost instantly when you use a shovel.
Oh, Minecraft logic... xD
