A lot actually,
Make others moderators, (if admin)
change it so TNT can explode or not
change it so fire can spread or not
Make it so others can't break/build blocks (also so they cant open doors or anything like chests or buttons) (if admin)
Fly without creative! (Make sure your on the ground before you stop flying, even if you fall 2 blocks you lose a lot of health)
