You should be able to pen the animals up and they'll actually stay now. Could try the fishing rod to get them all into one place too.

hmm mainly only sheep farms will be worth it since they will provide endless amounts of wool and well worth it since you can keep shearing them without fear of them despawning.

Sheep do not regrow their wool. So the only way to get more wool after shearing a sheep is to kill the sheep for more to spawn.

Is this like the wolf thing all over again? If you pen enough of them, they won't despawn and you just won't have any more mobs on the maps anymore? Or if you walk a certain distance away from the mobs will they despawn?

All passive mobs.... Cows, Chickens, Sheep, and Pigs will no longer despawn, no matter how far from them you go. They will exist in the world until you kill them.

So essentially, you run across pigs in the corner of the map. Say 10 of them.

Only a set number of passive mobs can spawn. Same goes for hostile mobs. The two limits are separate.
You can max out the passive mob spawn limit, but you'll still get hostile mobs at night.

no, they will respawn... although not as quickly as they do now...><
However, we have been told that we won't be able to breed animals, but we also won't run out of them.
And with cave spider spawners we can get a lot of string for wool!
