This update shouldn't have taken this long. How did Mojang make it faster when they started from scratch?
They didn't; it took them more time than 4J, if you exclude the bug fix. Besides, you're forgetting that 4J added tons of features not only from future updates but also as xbox exclusives.

Because they were designing it without xbox restrictions. Plus, don't they release snapshots of new updates for people to test before they officially release updates? (i don't really know the snapshot system) That gets you a lot faster feedback than doing in house tests. It may or may not be less informed feedback, but still faster and much more.

What if after 3 hours of playing the game, your xbox internal circuitry melted because of how much power the update was requiring? This is a ridiculous example, yes, but it's the kind of thing this kind of testing is for. They'd rather pay for the testing before hand, than paying to repair millions of xboxes.
