So, I was wondering. When an update adds something new to the game, like melons and seeds, will they appear in the old worlds that have already been created, or will they only appear in randomly created worlds after the update?

They will only show up if you have unexplored areas in your world. If you have explored your whole world, then you will have to add them in with creative mode if you want them.
Edit:except for things that can be crafted from items we already have, such as pumkin seeds from pumkins. But things like melons require new terrain to be generated so that you can find seeds.
