I seriously doubt that the PC version will 'fall behind' so to speak with performance compared to the Xbox one. My laptop has 8GB of RAM and I can do everything on MC just fine. My real concern with features between the two is that I feel the 360 version is being left out from some key things that the PC is getting; such as horses, all the redstone changes, ender chests, and trading.
"Being left out" implies that it's not ever coming. However, 4J have confirmed that horses are coming in a future update. While the other items have not been specifically confirmed, they did not come into the PC version until after update 1.1 - which is where the Xbox edition is currently. They probably also will be added in future updates. Therefore, to say that the 360 version is "being left out" is inaccurate and misleading. In reality, very little has been "left out" of what the PC contained at version 1.1. - Going through the list, all I could find missing was essentially hardcore mode.
Its almost impossible to compare the current Xbox version with any 1.x.x PC version because of the amount of features "pulled foward" to the Xbox. Basing an arguement on what the PC had at what time and comparing it to where the Xbox is now has very little merit, in my opinion.
Its been 10 months since 4J announced the Xbox will be going it own way, but we haven't seen any of that yet. Well sure, the Ender dragon battle on 360 is better, but would you really count that as "new material"?
(Im not crapping on 4J, just making an observation).
My point is that the plan was to get the "core" of Minecraft on the 360 and then diverge, but the public outcry from the 360 community continues to make the new PC content the new "core" material.
Just look what happened with horses! Within the first few days of the horse snapshot, people were on the forums clambering about getting them for 360. And 4J responded with an affirmation.
So you get what we have now. An Xbox version still "chasing" the PC.
Now you can say, "But we're getting Mash-up packs. Thats new." Are they? How different are they from resource packs on the PC?
What I'd like to see is truly exclusive content on the 360. And until there's a community willing to embrace a deviation from the PC, I dont think we'll get that.

there's a few issues. if you look at the mods for pc its near impossible to deviate from what the pc can potentially do. so staying within the parameters of minecraft 4j can really only give us polished 360 versions of things modders have already done for pc. like the resource/ mash-up packs you already pointed out.
but if you look at the suggestions forum you'll see there are plenty of people willing to diverge from what pc can do at its core. and yea every time the pc gets something there is an outcry that we the 360 users should have it as well. but that shouldn't stop them from taking the game in the direction they want as well. they can give us 360 exclusives as well as pc content in future updates. they should get what they truly want done. then anything that the community is really wanting could be added later or simultaneously.
i see this update as proof. people have been asking for upside down slabs and stairs since the game launched. so now we are getting them and mash-up packs. and a few other things that are core elements of minecraft. and horses could easily be added with some other elements there's no reason they should be the only content in an update.
And btw if I bought a game for the Xbox and it wasnt the same as the PC version I would be very upset, if it were substantialy different then it would be a different game, if its called Minecraft then it should be Minecraft no matter what platform its on, or beware false advertising, imho.
However, it isn't called Minecraft, is it? It's called Minecraft Xbox 360 Edition. Implying a difference. If it were the exact same game, it would ave just been called Minecraft.
Same goes for the Pocket Edition. It is drastically different than the PC version and anyone who buys it does not and should not expect it to be the same as the PC version. The hardware differences alone between an Xbox 360/Xbox One and a good PC should be enough to tell you the console versions are going to be different.
The Xbox One Edition though should be nearly identical to the PC version. Mojang says you should have at least 4 GB of RAM and the Xbox One uses 5GB of its 8GB for games. Minecraft on the PC runs better on multi-core CPUs, and the Xbox One has 8 cores (6 technically). People should be aware that even PC multiplayer does not have the seemingly infinite worlds everyone dearly wants. Servers just cannot handle it. The largest server I ever played on had a world that was 15,000x15,000 and had around 100 people on at all times. That was more than enough size.

Let me preface by saying that I agree with you on the principle of your statement. Im not trying to start a war.
Minecraft for the PC is a community driven game, and it should be no different on the 360. If the people want it, they should have it. Within reason. The main focus is the core experience. I was one of those asking for upside-down stairs back in June of last year. To me, they are "core" material. And we are getting them this update, with a plethora of other features I deem to be "core".
But I don't see the Wither, or beacons, or horses, or even the Redstone Update (<-- and that pains me to say it) as contributing anything to the "experience" of Minecraft. It would be cool to get those, eventually, but I would like to get truly new material first.
I'm not blaming 4J. They listen to the community, and that's commendable. I blame the players. The out cry for new vanilla features shadows any real, thoughtful innovations.
I know, there's tons of mods out there and its extremely difficult to come up with anything truly "original", but more often than not the Suggestions threads result in trollish comments and muck-raking.
I'm just saying we need a community willing to put things on the back-burner.
In light of horses possibly being added to the 360 Edition, I rather be riding a pig and guiding it with a "Carrot on a Stick". I've said this before, but it feels more of a "Minecraft" thing to do you know...
Horses are too mainstream on the PC version. I'd find it more of a challenge and fun traveling across the countryside, dodging drop offs and ravines, battling the creatures of the night, while searching for a place to call home with man's most unlikely traveling companion.

After 1.2.3 the Xbox 360 Edition is going it's own way, but 4JStudios has said on their Twitter that things like horses will be in a later update, so, no, I do not believe it will ever catch up, it will never be exactly equal as an Xbox 360's specs aren't high enough, the Xbox 360 itself only has 512 MB of RAM, which isn't near the required amount on the PC. Maybe the Xbox One Edition will be able to be equal and maybe even alot more, maybe the PC version will be behind the Xbox One Edition, but the reality is, nobody can know, the Xbox One will have 8 GB of RAM and way better specs than the 360

I agrree. I don't think, though, that will ever be able to rid the community of the factions that just seem to revel in taking a pro-PC, negative Xbox approach to everything. Partly because its Microsoft and a lot of being hold a grudge against Microsoft and partly because the Xbox Edition was put down in the media even before it was released. Also, the smaller kids (who play more frequently on the Xbox than on PC because it's what their parents will afford) are very influenced by what they see on You Tube and such and they don't think about what they really want. They see horses on a PC YouTubers channel... and they just instantly want that too.
