If you're trying to play on a different xbox than the one you bought it on, its because your xbox doesnt have the license to play it, only your account would, and thus you would need to be online to play (for microsoft to verify your live account also shares the license). You would have to license transfer to your other xbox to be able to play offline. If its the same one you bought it on, then I have no idea and I just rambled for no reason
If your trying to play it on the same Xbox, re-download the full version and remove the trial version of it. Or remove both and goto the marketplace and go into minecraft, then download the full version.

It's a mystery. I play offline all the time. In fact, my XBox isn't even normally connected to the internet. Are you selecting the option "continue playing offline" when it asks you before loading a world?

You need to be logged onto the console with the account that purchased the game. I can play offline with the network cable unplugged. It will say "online features unavailable," and ask if you want to log in to XBox Live. Say no, and you can play offline all you want.
With Minecraft, once you've bought the game you're golden. Other games, no so much.
You need to have online play unchecked on the screen where you pick difficulty level, creative or survival etc. I think it is the very top choice.
I think this was changed with the update... at least, I can't recall having to do this anymore when uploading individual worlds offline. Either it is remembering it after the first time I unchecked it or it is sensing that the XBox has no internet connection available to it. There is a secondary confirmation screen that comes up after requesting to load a world that asks something like "connect to XBox Live" or "continue playing offline."
I agree that the gamertag that purchased the game needs to be signed into the XBox console itself.
