Of the ores, I probably ignore redstone the most. In my main world, I have a chest full of the stuff and have gone to burning up whatever I can't avoid collecting in the lava pit. I wish they would add some sort of redstone block, like they have iron blocks; so that you could reduce the storage space required to keep it and build with it if you get in the mood for something funky in red. I never ignore iron because even after you have enough for tools and such, you can craft it into blocks. Ditto for diamonds and for gold, not that I've managed to get way too much of those yet. I generally also use up my coal either making torches or smelting cobblestone into smooth stone, so I don't ignore that one either; but I also wouldn't mind it if they introduced a black coal building block.
If we're expanding the list to include things other than ores, well then I probably ignore wood in the wilds most of all. The wild trees only get sacrificed if I'm clearing land for building since the trees grow fast enough on my treefarm that I'll never have to chop down a wild one ever again for any wooden building materials or tools.
If I'm mining, I will not ignore redstone, even though I have more than one large chest full after lots of redstone use. But if I'm doing other stuff, like lighting up caves, I will ignore it. I seldom ignore any of the others listed, though I won't go far out of my way for iron anymore.
Coal and redstone. I need coal but for some reason I always ignore it. I always just leave it there and then I mine them when I need it to cook something. I need redstone and I have a butload of them but I don't feel like mining every single one because mining one already makes me want to fall to sleep.

I am working on an Adventure map (and bashing my head against the wall without Creative to help me) and I already have enough diamonds for all the tools I need and the diamonds the players will need for weapons. Even with that said, I CANNOT pass up on a diamond. I've actually thrown Gold Ore into lava intentionally, but diamonds... I can't get enough of that sparkly stuff.
I used to ignore coal, but then I found that I needed it more than I thought. It's pretty much essential when you think about it. Now, I'm quite happy when I find coal even though it's rather common.

first things that came to mind when reading the title were lapis and clay. I have no use for either. of the things actually in the poll, I skip coal because it grows on trees. If I want it I go to my tree farm and then burn some wood. I cannot imagine skipping redstone. designing Redstone devices is the most interesting part of the game.

Coal, which is the main reason I only have 1 stack of it. I find coal everywhere but in the hunt for diamonds and other rarer materials. I never seem to grab it, lol.
I tend to ignore redstone, since I have enough of it right now for any thing I want to make using it. And for the people who ignore gold, why not use to make some tower of pimps around your world? That's the main use I have for it.
I said coal....There is plenty of it around. I don't really "ignore" it as much as "I'll come back to get it later". And I made a couple tree farms, so I have endless supplies of wood, and burn that into charcoal. I'll start my new world after the update by setting up my tree farms and getting plenty of wood, sticks, and charcoal for my exploring needs.
I ignore dirt,gravel, and the general look of the area as i want to preserve much of the look most times. Still would ignore those 2 basic ones unless it got in my way or i ran out of those.
I Organize my Chests accordingly, as it bugs me to not have everything organized as such.
The time i pass up much of the rarer stuff is when i don't have an iron pick on me at the moment...

My First World, always getting back to is a pleasure I enjoy with each new update that brings in more things to add in.
Plus everything has a use, especially coal as I hate wasting wood for charcoal.
