I have been playing MineCraft for the 360 ever since its original release, and yet I still keep learning new things all the time! That being said, I figured I would make a thread for new and old members to post what they have learned personally from the game, sorry, tutorial learning does not count!
I have recently learned:
You can dye sheep?!?!?!
Tiny slimes just bump you, they do not hurt you, no more need to run-n-punch!
Roofs leak when it rains? I've built almost entirely in the Taiga climate, but after expanding down the hill side we have noticed this phenomenon. Now we just need to be able to place buckets on the floor under the leaks!
See? Simple things the game likely doesn't teach you. I've never used the tutorial though, so I really don't know!

I too have been playing since the release date. But I have found there is really nothing else to learn after playing the game and learning to build, farm, mine, I find the skills I have are more than enough to get me by in minecraft
Yes, but I am talking about the interesting little "Oh, no way?" moments like I'd had listed. There were a few others but at the moment i have forgotten them.
1. Skeletons can be just about as deadly as creepers. (When attacking from a distance)
2. TNT spreads. Fast.
3. Redstone can take a longer time than other redstone.
4. Water breaks redstone and rails.
5. Lava makes wood burn at 4 (I think) blocks away.
6. You regret not mining the gold ore once u start building ur roller coaster
7. Diamonds can be found under lava.
8. Items can slide on ice.
9. Dogs can still attack while sitting if the attacker is close enough.
10. Creepers make your map look like WWII battlefield.

The main thing I learned early on was how the water physics were totally different that what I thought they would be. Causes me to totally botch a few projects I was working on.

The water is one of my favorites and I hate it at the same time! I mean, you can cover a hillside from just one source block, but, at the same time, you can cover a hillside from one source block!
Major facepalm: If you crouch, you can walk safely to the edge, without falling off. I built so many things risking my neck at high altitudes before learning this.

OP: Ohhhh boy, I couldn't even list all the things I've learned. Most of it involves redstone, but I also had the issue with not knowing about crouching to avoid falling off of a block. I ended up watching a video on youtube, and noticed someone crouching and walking on the edge of a block, completely off of the block pretty much. That's when I finally put two and two together.
In working with my slime farm issues, I just learned that if you clear a long enough and wide enough tunnel area underground, you can see the sun rise while standing on layer 10 (even though the tunnel is not open to the ground or sky).

A sign will stop water.
No mater how far you fall, a little bit of water (2 maybe 3 blocks deep I think) will keep you from taking any damage at all.
Minecarts do not work like boats in lava.(sigh)

Ugh, took forever to wire up a double iron door (by myself, It takes a LONG time for me to figure it out)

Slightly on topic: Using signs for air holes underwater has saved my life many times, or a temp air hole with a torch, works well indeed.
If you run around placing a dozen in random holes in the ceiling, they will all fall after the first detonation. Also, there is no surviving TNT rain.
