There is a number limit of how many drops you can have floating around in the world at any one point in time. I don't think anyone knows for sure what it is exactly but Nose_Job_For_A _Cowboy recently did an experiment and concluded that is was somewhere in the neighbourhood of 4 full stacks (256 items). If your auto wheat farm is producing more than that, the drops tend to just disappear.
On Mob Traps, I recently saw a video that indicated the particular mob grinder (drop kill) max'd out at around 62 items. However, this may have something to do with the size of the collection area, which was only 4 blocks square.
My theory is that the drop limit is based on the area over which the drops are occuring. You can perhaps have 1 stack in drops floating per every 4 square blocks. There could also conceivably be a per player ratio involved as well; and there may still be an overall drop limit for the entire map.
