Okay, so I was wondering, does anyone have any idea when minecraft xbox version will be up to date with the PC version?

Short answer: Never.

Long Answer: Never because this isn't a port of the PC game. Once we get the the equivalent of the PC's release 1.2.3, 4J and Mojang are going to do other things with the Xbox 360 Edition instead of following the PC.
