The one thing I can think of right off the bat, is fixing holes left behind by the locals... (By that, I mean creepers. )
Edit: I did forget to throw in an idea. Perhaps, since dirt is easy to remove if you make a mistake here and there, use it to map out a Labyrinth to challenge other player's on the forums?
I'm currently saving all my dirt on chests since I am planning on building a hill that connects to my castle so I can have a secret tunnel in to it. Though it might work better if I do it into the basement.
I usually have 3 or 4 chests filled to the brim with dirt, keep it around for creeper craters and building moats (moats are my passion) if you dont want it, throw it in some lava.
I don't think my idea for all the dirt I've collected is forum friendly. lol

With the dirt I'm collecting, I'm mostly building up plateaus between my various mountain peaks in order to eventually build on them.
The possibilities with it are endless.
