Okay so i've thought about this because I've been seeing alot of them in the 360 section of the forums...How could you possibly have an xbox minecraft server if its impossible to load up a map without being on it? This is how I see it though..
1. You leave your xbox on 24/7
1.2) You'll be available to be killed by numerous people and your **** stolen or griefed.
2. Share your account with a friend to host when you cannot.
2.2) Thats totally against MS tos.
2.3) I personally would never trust my friends with something I pay good money for.
3. You have your friend do it instead.
3.2) All reverts back to 1 and 2

1. This is pretty much it, some people don't mind the potential risk of killing their xbox.
1.2 Servers are only open to friends and friends of friends of the host(And I think recent players) so not just ANYONE can join in the server. Xbox 360 "servers" can be put on invite-only so no one can just join(some what like a whitelist)
2. I don't know if sharing your account with someone itself is against the ToS or not, I'd have to read through it again. However, the friend would also need the actual world save file to run it(can be overcome with saving file to the cloud). However, if you don't share the account itself and want to share the world save that requires modding and I know that is 100% against the rules.
It has its ups and downs, just like any other game out there.
