Only wheat needs trampling protection. Everything else we can grow in the current version doesn't use tilled soil. Farm animals wander through my cane plantation all day without doing any damage.
You can actually crouch while walking on tilled dirt. It worked the other day, not sure if it is a minor glitch for myself but it worked. Saves an issue with re-tilling until you can build a farm for wheat were you do not have to walk on the dirt but on a pathway or some such.
Mine is built to where it wraps around itself, I walk on only one pathway and am able to harvest a stack or so of wheat and seeds or more. Got the idea off a dude on youtube, so credit goes to him.

Crouching has always and was meant to do that with wheat.
No i dont Think they do, They just need water around them. best part is Animals can brake em
Pigs and cows are running through my crops all the time nothing happens.
Works well with keeping any and all creatures out and to hide the water sources and glowstone around the green house.
