I decided to start a map that would (hopefully) give me the opportunity to play with other players. I decided, monsters on all the time but wanted people coming in to play to be able to make it off the spawn point safely and to have safe havens throughout the world to shelter in at night.
Boy, did I underestimate how difficult that could be! I normally play on peaceful because I'm more interested in building than fighting monsters and usually just turn them on to run the grinder a few cycles or when I need something specific that can only be gotten from monsters.
I did a little of the "survivor man" mode. Started off with just a wooden set of tools, found a location and built a small hootch to shelter in with what was in the area. When there was a small cabin, sugar cane planted and a small wheat farm and food cache I left everything there (including shears) save a set of stone tools and weapons and headed off again. It was liking re-doing that first night over and over again and, yes, it was a bit exciting. Not to mention a nice break from trying to build a decent intro point into this new world.
Does anyone else take on the role of nomadic traveler and do the same?

I've done it from time to time..Like you I use Peaceful a great deal to build but like to switch back to survival from time to time to make things interesting. Usually after I'm sure that I've made my creations relatively safe from creeper damage.
I've done the nomad thing a few times. Just set off with a few tools and a map and wandered. It's amazing how non-productive you are when you are running from shelter to shelter!
I don't think I've ever intentionally played on anything below "normal", and now only play on "hard". It's just not much of a challenge otherwise. Working on a nice above-ground build is a little bit edgier when you have to periodically look around for creepers

Or trying to exit a cabin that has no windows because night time got there before you could put them in. Next thing you know, it's a mad dash for the nearest deep water pool to try and kill them from below.

For me, it's always running for some open ground, followed by a running backpedalling 360 maneuver, scanning for anything green that moves... lol...
I started doing something similar in my world. I have a nice big town built up, walled in, and lit up, and then I lost my motivation to build. So i struck out into the wilderness and started work on a new town, having to do survival all ovr again is just what I needed.
A big stud would laugh in the face of creepers and shout, "I am Sparta" to the zombie and skeleton hordes at night. This GAL, finds a place to hide and waits for the daylight, like a sane person.
