The things I'm excited for (besides creative mode) aren't coming in the next update. I could care less about sprint, except for the fact it will probably make you fly faster. I'm most excited for when they turn glowstone back into a transparent type block. Also looking forward to redstone lamps, glass panes, new dispenser mechanics, and whatnot.

Stackable food and sprinting. Pretty much everything that uses hunger bar lol

Yes, 4J has said you will be able to choose what mode you want to be in when you load up your world. You won't be able to change in-game though.
