I like redstone, so preferably a cool setup with that/pistons/etc. I've built a massive mob spawner, castles, cool mines, secret piston door areas, need more ideas...

Or if you really want a challenge, use note blocks to play a song, like the mario theme or something else like that.
I think I'll find a seed that has lots of snow biomes & build Santa's Workshop, in prep for Christmas ;). Decorate all the trees, giant candy canes, snowmen, that sort of thing.

Brilliant. This actually kind of reminds me of my idea.
I have a big town with all my friends and near christmas time, I'm going
to put a huge tree in the center of the town and decorate it with glowstone,
redtone torches, and colored wool.
If redstone is your thing, there should be NO shortage in projects....... You Tube is your friend.......... Try a TNT people Launcher/Cannon or a Computer/Calculator for a real challenge...... Maybe make a Mini golf map..... TNT Olympics....... GOOD LUCK!!!!

Have you noticed you put tons of periods in your posts?
NOPE........ Why?????? Oh I know, He could build a redstone Block generator.... To stop.... A period gets attention... Take that for what you will.... (everyone has a different style) Rest your eyes it's OK...Pause, Now Why does it matter???????

It can, there was one shown off on the 360 forum that worked fine from what the owner said. I'm sure it caused a crazy amount of lag when near it though. My RNG makes my framerate drop from several chunks away when it's running
I noticed somebody suggested building a computer... don't do it, OP. If you don't know what you're doing, you will just drive yourself insane. You will end up with a random assortment of redstone you won't know how to complete.

I've actually made 2 massive spawners, the first was the same design I had on PC, but the lag was UNBEARABLE. The 360 is much more susceptible to that kind of lag, so I want to stay away from absurdly intricate things considering that fact. I hate lag... So very much.

I built the first and only (so far) redstone computer on the 360 version. And it runs just fine, no lag, it does have frequent redstone glitches, but that's unavoidable. Here it is, if you want to check it out:

I just wanted to show that the insanely complex builds are possible. They will be extremely glitchy, but that will hopefully be fixed with the updates.

Try making an SMP elevator.
I've found that there are 2 different types of working piston elevators: my modified version of Etho's elevator and a car elevator, where pistons push and pull each other above and below you to move you up and down.

I think the update that gives us iron bars and glass panes will allow wireless redstone setups, but not sure if there's a way to do that now?
