All of the above. I enjoy building then defending my buildings from in coming creepers. Love going into mines always unexpected goodness and attacks from mobs.
I actually like to commit suicide in Minecraft. It's the easiest way to teleport home to grab more supplies and fully heal myself. If we had stackable food, then I wouldn't have to rely on suicide for healing, but food currently takes up too much space for the amount of materials I work with while building and exploring.
I actually chose the suicide option, finding new and interesting ways to kill myself/friends has brought me great entertainment. Death is cheap in this game as long as your inventory is still obtainable so I have fun with it.
Exploring is probably my actual favorite part. I've built some large things for gits and shiggles, but I really like building small survival outposts in different areas in the wild. That's how I played when I first started, but I lost interest in doing when I realised I could pretty much get anywhere and back in 1 day from the middle of the board, so it seems kinda pointless.
It's actually the planning stage that I enjoy most. Usually the execution, which I guess would be building, is usually just repetitive for me. I normally build all my building in ground or in a mountain, so my "building" is clearing tens of thousands of blocks. It's nice and relaxing, but it's not the most enjoyable thing. Planning out the vast caverns and underground cities and the abyss and the backstory to why my world is like it is, that's what I enjoy most.
Building. Love building stuff. And I love to explore too. You never know what you will find! (Unless if you are in a cave, you will a bunch of lava in your face.)
I like to do a bit of this and a bit of that... nothing for too long at a stretch. I'm not a good fighter, so I tend to spend more time in Peaceful and do more exploring, mining and building.
Although I agree with an earlier poster that suicide is no joke (since I had a few friends do it for real), I have to say that I had some fun exiting worlds by intentionally dying. Since the practice in the group I play with locally is to put everything into a chest before leaving the game (to avoid the inventory sapping bug); I'll sometimes leave a suicide note and/or Will on a sign by the chest in case another player finds it before I visit them to play again. Then, re-entering the world is just like starting over everytime... keeps it interesting.

Exploring is fun but sometimes dangerous... and mining is repetitive so it gives me headaches... Yeah, I'm a weakling.
