1) When a new update comes in, will I need to make a new map? Or will all of the changes function on my old maps?
2) when creative mode is added can it be switched back and forth? i.e. Make a castle/etc and then play survival mode? Will you be able to do that on your old maps?
1) In order to get the new features (if they're related to natural generation (i.e. swamp biomes)) you'll need to explore un-generated chunks or if you have explored the enitre map, you'd need to make a new world.
2) No. You will not be able to switch back and forth, until later in the future.

This is a signature. I have literally nothing to put in it.
If you're a small map maker, send me a PM and if it's good enough I'll advertise it in my sig.

1. If you have explored your whole map, then yes.
2. Yes.
You will need to start a new map if you have explored your whole map already. This is only for terrain features though. You will still be able to use all the new craftable items.
Yes, you can switch between creative and survival in the same world. You will be able to pick which one you start in, when you load up your world.
Now, in creative mode, does it have all of the materials? Or is it limited? Also, will those blocks function just like normal blocks? i.e. if you destroy a (creative mode) cobblestone it will drop a cobblestone block in survival mode?
You don't need to delete your map, but if you want NPC villages, improved terrain and mineshafts etc. You will need to (If you already discovered your whole map)
We also MIGHT be able to switch from Creative to survival.

Creative mode has access to all the materials. I don't think destroying a block causes it to drop though.
Ok, so there's still a reason to actually mine No placing ire(ore) blocks and then just "mining" them without digging like normal.
I am pretty sure. I don't actually have the PC version so I can't be 100% sure, but that seems to be how I remember it from what I have seen. Though, if you wanted to you could just add the ore to your inventory and/or put it in a chest.
