Try map seed "Apocalypse" (without quotations, of course)
Its about 80% snow. There are few mountains, and none exceed past the clouds. There are wide, open hills and many, many caves in easy and noticeable places throughout the area. I recall finding well over 150 blocks of iron (150 blocks x 9=1350 ingots ), 54 blocks of gold, 200+ lapis blocks, and at least 100 diamonds in a matter of a week. There are some trees, and some along the edges, but not many.
There are nearly no overhangs, but a couple (literally) out of view along the edge of the world. Ive noticed an abundance of sheep, pigs and wolves, but that may just be a coincidence. Unfortunately, there aren't many folwers, since there isn't too much of a forest. You can just replant trees and activate bonemeal on the ground to grow patches of grass and flowers.
I would say the map is about 30% water, but most of it is frozen over. The land all connects, and is in the shape of an "X"
There are quite a few monster spawners, and there is a spider one very close to the surface. I can post coords of them, as well as an area you can find slimes. Just PM me if you're interested!
I'm pretty picky when it comes to seeds so if you know one that fits my description pretty well, I'd love to hear it!

lots of ores (most wanted: diamond, lapis lazuli, gold, and iron)
easy-to-access obsidian
NO overhangs
LOTS of sheep & pigs (and wolves, maybe)
LOTS of flowers (for dyes)
A few easy-to-access monster spawner rooms (for mossy stone)
not much water across whole map

Seed -2041803145 fits what you are looking for in every aspect. It has the largest land mass of any map I have seen, and not too far from the center of the map are a couple of dungeons in existing caves, lots of flowers, and two very small snowy areas.
Notch is ur poison. there is a mob spawner but i cant figure out where it is. But its flat no retarded water and if u want it super falt U can just clear the 3 high block on the middle and ur basicly flat for like 50000000000000000 miles

I forgot to mention, there is a shorter way to type it, but the forum won't let me type it, it is the BB code for italics, also, don't forget the - at the beginning. I don't know if it matters, but there are also 48 pumpkins, which is the most I have found in a seed so far. You can make flowers by using bone meal on green topped dirt blocks, just in case you did not already know that :).
