Edit : he dosent have a grinder he has a gravity drop,Im simply say`n if he did have a grinder he wouldnt have to worry about a door.I personally like a lava blade set high ,some times just for fun cacti.bassically he could get way around the whole getting shot thing, if it was inclosed and a grinder....could just stand there and get the goods.

mob grinders are made to automatically kill mobs and leave the drops for the player to pick up. the gravity drop is a grinder, it's just a different kind of grinder. Also, using cactus in a grinder usually isn't the best of ideas due to a cactus' tendency to destroy any item that comes in contact with it.

If it were me i'd have to do something to cover that up because i think vertical wiring looks like crap, but that's me. I dont know why i didnt think to just look up a picture of vertical wiring before.
Note the above pic left side is for vertically wiring down, right side is for vertically wiring up. My questions is by on/off do you mean stop mob spawning or just the simple stop mobs dropping?
I'd recommend making your spawning pads just 3 blocks high (Mine is) then create a block switcher with glowstone on the ceiling, to act as lights. With that height, it'll be too light fo mobs to spawn. But you could make it up to 6 or 7 blocks high I think.
Best "try hard" option if you ask me.
Otherwise you can make the switch activate a piston that leads the items to cactus, under where they originally land, to just destroy whatever items you just don't want.

Why not just add the ability to turn the blade on and off with 2 pistons? Benefit being when the grinder is off and its full of mobs, the server never has to worry about mobs spawning elsewhere, their all in the grinder haha.

I was up all night with a rusty hammer, trying to build a fence around these magic beans my dreams have gathered.

Kinda, they despawn after being, I think, 132 blocks away. Somewhere near that number, but yeah... Kinda.

Have a sticky piston that's default pushed out so it blocks block the canal at it's beginning, so they can't fall down the canal. Just hit the switch off and the pistons will release, allowing them to fall through.

mob grinders are made to automatically kill mobs and leave the drops for the player to pick up. the gravity drop is a grinder, it's just a different kind of grinder.
