I may be wrong, with the Xbox version being MUCH older than the PC one, but this is how they are supposed to work:
Dispensers: These are objects capable of shooting arrows, eggs and other things. they are activated by sending a redstone signal to it. This signal will only shoot one object out (the one selected is random, i think). To have it rapid fire, you need to create a redstone clock (or use a button or lever repeatedly). Redstone clocks are pretty easy to make, i suggest looking it up if you want to use redstone in cooler ways.
Jukeboxes: A cool decoration, but if you want more, get a skeleton to kill a creeper. there is a chance to drop a music disc in this scenario, then simply use the disc on the jukebox and enjoy

How do the dispensers shoot out items? Pressure plates?
Zonotos just told you, with a redstone signal. They're mainly used for traps or to hand out prizes for various things. There are of course numerous other uses, the two I mentioned are just the most typical.
Yea zonotos is 100% correct and juke boxes you just get Skelton to kill creeper and you get a disc grab that and left click with disc equipped and a song should play

Dispensers shoot arrows and eggs, and it dispenses everything else. A dispenser is activated via redstone, either it be a pressureplate, redstone wires, or torch. Once xbox mc hits around the 1.3.1 mark, a dispenser will be able to place and take lava and water, place boats and minecrafts, and shoot fire charges (basically like a shootable flint n steel).
Jukeboxes can play music disk, which are either found via dungeon, or creeper drop (only when a skeleton's arrow kills the creeper). Has no real use other then that.

I didn't know they'd be able to place boats and minecarts. That's kind of dumb... takes the fun out of building a complex minecart station with a huge cart storage area.
