He would know the total block count of the world and would have TONS and I mean TONS of resourcs to build with. I am pretty sure that he would have saved up some water and lava too in buckets.
Hope the OP knows he can't sit down for hours on hours without getting up and stretching. Those Blood Clots are dangerous things. I hope he is ok, I really want to see the progress.

Also might help to say that I'm giving up the "vanilla" idea of this project. While there's still no TNT being used, I'm popping into Creative mode every now and then to get some Diamond Pickaxes. Otherwise, I'd die from boredom.
creative is out now, so for the sake of your health i hope you switched to that to make mining faster. A fast way of digging a lot of blocks with creative is to dig straight down to bedrock, and then fly back up the hole while filling it with tnt.
The only way I see you succeeding is if you get the max # of people you can have on at once on your world, Mining into infinity. Seriously, after mining a 200x100x4 slime chunk on my old map, i got bored of minecraft and quit... that's how crazy mining will make you.
Also, if you do NOT succeed, it will feel like one huge hell of a waste of time, but have fun

You aren't the first one to try an insane project like this. Strip mining is tedious, boring work... full of surprises.
The Bad News is this took me many weeks.
The Good News is you do end up with lots of blocks, lots of ores, and you find all the intersecting (hidden) caves.
EDIT: No, I didn't use any TNT. Every block was pickaxed, and I did it all by myself.
BTW, to mine the whole xbox map down to bedrock is over 47.7 million blocks. At one a second, working 24/7 (no fair sleeping, potty breaks, or eating!), it would still take you 553 days. Just a fun factoid...

I am also doing this, but with TNT, I have to say over 10% is gone. Most damage is underground and very little on top.
Tried doing this with tnt once, ten minutes later I gave up after viewing my map haha, hope it turns out well.
