Can you update the pictures and show us your progress so far? I'm sure many of us want to see how much you have mined. If you have filled out your map, a picture of it would be nice too.
You aren't the first one to try an insane project like this. Strip mining is tedious, boring work... full of surprises.
The Bad News is this took me many weeks.
The Good News is you do end up with lots of blocks, lots of ores, and you find all the intersecting (hidden) caves.
EDIT: No, I didn't use any TNT. Every block was pickaxed, and I did it all by myself.
BTW, to mine the whole xbox map down to bedrock is over 47.7 million blocks. At one a second, working 24/7 (no fair sleeping, potty breaks, or eating!), it would still take you 553 days. Just a fun factoid...

I am dropping sand into the water, then mining the sand.
pro-tip for that, incase you dont already know. Drop all the sand you have into the water, then dig all the way to the bottom of the sand and remove the bottom block of each stack, placing a torch underneath the stack immediately after, destroying the stacks as they fall onto the torch. This is an intended physic so it'll keep your world vanilla and save a LOT of time.

Pc doesn't have infinite. it's 32,000,000x32,000,000. so its possible on pc, just stupid.
Or wait for creative... But I'm imagining a hole straight to bedrock filled up with TNT, and take thousands of those and line them up in a grid all the way down the map and hook them all up to one button in an obsidian bunker.
