Endermen are used to open the portal. Once you find the portal, you need eyes of ender (no same number) to active the portal. The only way to get these eyes is to kill an enderman, get the ender pearl and combine it with another item (i think blaze rods) to make an eye of ender.
Endermen spawning in the overworld is a bit more rare than zombies, skeletons, spiders, and creepers. Seeing one every other night or every three nights (if u look outside) is normal.
