So when I first started playing a few weeks ago I tried to make unlimited water and failed. I assumed it couldnt' be done on the xbox and I didn;t try again until today. Did they change that in the update or am I just a tard and didn't do it right the first time? Also does water travel farther now because when I made my first mob trap I would have to put 1 bucket of water down for every 8 blocks I wanted it to travel then make a step and add another bucket for the next 8 blocks, but I noticed today that if I make the steps shorter than 8 blocks long that the water keeps on travelling. I was able to make 1 bucket travel for 27 blocks, could have went longer but my wall was in the way, just by making shorter steps. Has it always been this way and I just didn't notice or did they change this with the update?
To make infinite water, scoop out buckets from a pool with water on at least 2 opposing sides and make sure the pool near your scooping is all the same depth. This is what got me at first. If the depth changes near where you do this, there seems to be a possibility it will mess up, and you end up removing a source block that doesn't get replenished. The result isn't pretty, with water currents flowing in odd directions in the middle of the pool.

I did this intentionally under the water-wheel of my mill to make the water look agitated and disturbed. It has the added bonus of constantly trapping wandering mobs who plaintively howl until I come get them out or let them drown.
yeah that bugs the crap outta me. my son does that when we're playing together and I run around behind him fixing it and making the water calm again.
Something similar happened to me when I was getting the on the rails achievement. I had to build out into water to make it long enough. Once I got it I went to remove the rails and blocks, and it started messing up all the water. Got about halfway done and just gave up. Now I just have rails sitting out in the middle of the ocean.

1) Infinite water sources have worked on the XBox even prior to the July update, so I assume they have always worked. Must be something you misplaced.
2) Water will flow at the level for a maximum of 8 blocks in a direction, but will flow indefinitely downhill. So, if you carve steps going downhill all the way at less than 8 blocks apart, the water will continue to go down them. If you wait until after the 8th block to carve the next step, then you'll have to place a new bucket for the fall to continue.
Nothing has intentionally changed as far as I know. That said, there have been some people who have noticed oddities with water in their worlds since the August bug fix update (see the official bug thread). I personally have now generated two worlds in which I've found water "hanging" on the very edge of a cliff next to open air blocks less than 8 blocks long and even seen water on top of air blocks such that I could walk on dry land under the water without getting wet. The water did "fall" normally as soon as a block was placed and then mined adjacent to the water block.

To calm the water, you just have to place a block under the current, not from the sea floor. Then you can mine the block and everything will be fine. This is what I do to fix water.

I understood it to mean that after I built up 1 column to start, I didn't have to keep building more columns with sand (which is what I did), I could just switch to dirt and build out horizontally from there.

no they havent changed anything at all its been the same way ever since launch xD
the block 1 under the surface is the simple way to fix that bumpy water and instead of a 2x2 for infinite water you can do a 3 block line then water on left and right side infinite in the middle

The 3 block line is what i tried the first time and for some reason it didn't work. havent tried it again since. maybe i'll try it tonight, MC might just be messin with me.
You have to place it under the water current. It's possible to remove a bucket of water from 1-2 blocks below the surface and have the current show up in all the blocks above that. Not saying that's what you did but I do it all the time myself.
