I'm looking for good flatland seeds with huge... And I mean HUGE open areas! My only requirements are: 1. Must be a massively enormously huge flatland space 2. Must have pumpkins 3. Must have sugarcane and diamonds!

Has all that you requested. It has a huge flat area in the middle of the map, sugarcane everywhere and so far diamonds haven't been a problem for me. I don't know the exact coordinates of the pumpkins, but they're fairly easy to find in the southwest.

Are you kidding? I have been flattening that seed since July every day and I am not even 30% done. Let's be a bit more helpful.
has a large central continent, large flat areas, and 49! pumpkins, I don't have coords for the pumpkins but they were in large groups, not too hard to find and loads of sugar cane, cactus, and plenty of diamonds so far, still exploring
