Do they prefer to spawn in the unlit cave systems close by rather than a lit up, fully mined out chunk? I can hear zombies in the walls when I'm in my little mined out chunk, and have only had one slime spawn where it is meant to so far.
They are equally able to spawn in lit and unlit areas. Open areas will allow more space for them to spawn, increasing the possibility of them doing so. Make sure that all surrounding areas, especially cave systems, are very well lit to decrease the possibility of other mobs spawning. Since Slimes are a rare mob, other mobs will spawn before them if the conditions are correct.

I was also under the impression that large slimes needed a 3x3x3 area to spawn, not a 5x5x5. Also, there is roughly a 1 in 10 chance that the chunk will be capable of spawning slimes, not that slimes will spawn.

However if you have it for the PC Version (sorry if you don't) there is a method you could use to see caves in your world (go back to 1.7.3 using a program like MCNostalgia, use the seed for your x-box world on it and browse using MCEdit, having your x-box on ready to explore the caves in both helps as well.). Big slimes do need 3x3x3 however I always increase it by two each side as 3x3x3 is a very slim chance, and I guess that stuck in my head as a minimum. Copied directly from the wiki: 'Slimes spawn only 1/10th as often as other hostile mobs' and 'That is, using the chunk coordinates to help generate a seed, a random number between 0 and 9 will be generated' So in other words 1/10 for a slime chunk and 1/10 for a slime in that chunk. (P.S Render Distance would be a bonus in X-Box Edition I must admit.)
