I have ideas for people who are running out of things to build. I could use some my self. But anyway I have some ideas:
Lighthouse
Arena
Massive house or fortress
A village
A underwater city

build a village were people can join. were you have currency, stores, banks... a realistic life hope this helps

Arena General store, bunker, underground base with a hidden door, sand maker, wipeout obstacle course, waterfall movie theatre, pixel art, mcdonalds with working drive through (ITS AWESOME) hotel, community farm town hall light house castle under ground village a minecart around your city, subway system... Well thats some projects

A statue, a redstone machine, pixel art, a monument (Eiffel tower, pyramid of Giza, white house, golden gate bridge, etc.), a gym, a factory, a public pool, the minecraft Olympics, more statues, a crashed airplane, a very detailed and important looking nether portal, A CIRCLE!!! Or maybe a square.

Ideas for  things you could build in minecraft, duh!:
Lighthouse
Massive house/ fortress
Flying ships, crashed ships, burning ships.
Airport
Underwater city.
Village
Undergound base
Floating islands
Spherical house.
A wall dividing the world in half.
Multiple spheres(floating) connected by tunnels for a base
Quarry base-
Dig out 4 chunks (one chunk is 16x16) in a massive square down to bedrock, then construct your base.

A factory
- add a trainyard

A water tower

> Build a volcano, use pistons to allow lava to flow from sides
> Make an insane minecart track to explore a world
> Make some forts that look run down across your world
> Create a waterpark
> make a billboard
> Make a self constructing village and post it.
> build a radio tower.
> Olympic stadium

Great ideas hear i only play on xbox so ill start with the smaller simpler ones lol

I have a fighting arena so when we get bored of builds...just go to the arena with random chests with random items ( leather iron gold diamond gear) all mixed in diff chests go in the giant circle and fight to the death with whatever you have on. I usually give about 1 minute to 90 seconds to grab and equip gear then it's an all out battle with swords, sticks, bows w/e winner puts the stuff back in any chest they want. Only prize is bragging rights lmao

I was thinking along the lines of a village of course with currency and such like someone said above, buuuttttttt you could have sorts of shops scattered in the village or one main hub and dupe supplies and items in a chest. Then randoms or friends who join your server want to build they can go mine for gold, iron, and diamond for currency. Or you could flip flop it where they get supplies and you pay them. I guess it mind as well be both ways like trading. The more I think about it the more the whole description of it seems pointless...l
