During the time before the game was released, 4J stated the updates would be coming out much faster because they know exactly what needs to be updated/changed/added and already have those assets. Obviously they will occasionally encounter their own unique bugs to the platform/code change, and the time it takes to certify an update from Microsoft, but here's the thing:
XBLA version came out on May 9th (2012) at version 1.6.6 beta, and has since updated to 1.7.3 on July 13th. The time between 1.6.6 and 1.7.3 on PC was May 31st - July 8th, a considerably shorter time frame when compared to the XBLA version. (This also doesn't take into account when the game was "gold" which would have given them even more time to work on the 1.7.3 update.)
Personally I've noticed a number of claims by 4J have been proven invalid over time, and I feel like it should be pointed out, because I'm sure everybody would rather get a realistic time frame instead of being excited and then being let down.
XBLA Version:
1.6.6: May 9th, 2012
1.6.6 Bug Fix: June 15th, 2012
1.7.3: July 13th, 2012
1.7.3 Bug Fix: August 7th, 2012
If you just take 1.6.6 and 1.7.3 then you have a little more than two months in between the two. May 9th and Jily 13th are almost exactly 2 months apart, however there are update in between each that they work on.
Every single video game company in history has made claims they never came though with. Who cares?
We'll get the updates eventually and that's all that matters. Why is everyone in such a rush all the time? The game isn't going anywhere. Neither is your Xbox 360, 4JStudios, Mojang, Microsoft.... When you wake up tomorrow, you'll be one day closer to the next update.
Also, Microsoft has an update schedule. One month is a Title Update, then next is a Bug Patch and so on and so forth. That means it has to be two months between the updates no matter what.
While it has been on par compared to the PC version with update times so far, I do think they will start to pick up the pace. I would not be surprised at all if they got 1.2.3 out by the end of the year. Even just looking at 1.8.2, if they get it out by September, which I, and many other people think they will, they would already be 2 months ahead of what it took the PC version.
Another reason it's taking so long for 1.8.2 is because it is a completely game changing update. Aside from the official 1.3.1 update on the PC, 1.8 was the biggest update the game ever received.
As long as they catch up with the pc and continue with what the pc is adding ill play. 4J can take as long as they need ill play till updates come then play more!

If I recall correctly, PC 1.8.1 came out mid September, so I don't see where you are getting two months from.

I was going off the sound update, but I guess it didn't really add much. Even still, if they release mid September and pull up things early(such as breeding and/or enchanting, which they said they are looking into) they would already have a head start on the next update.

They can still get ahead and on track if they do it right.
The last official Beta update for the Pc version came out in November. We should be getting the last Beta equivalent update sometime in September hopefully. That will then allow them to get 1.2.3 out in October.

Wiki says September 14th. I'm guessing it will be around that time for the XBLA version since 1.7 came out in July for PC as well.
