I usually find iron in the side of exposed stone mountain ranges, on the seed "worstseedever" there is exposed iron and coal under the water right where you spawn.

I find it on the sides of stone mountains quite often too. Also in stone walls near water.
Generated a map that had a rather large solid stone beach I found, right on "sea level." Had 5 iron visible on the surface, right on the edge of the water.
