So here I though we could post some ideas that you have in your world(s) or some buildings you are think you could build.

Eh, a little basic, if you were to ask me. Don't get me wrong; all of these things are very impressive, especially if time and effort is put into making it look right. Its just that EVERYBODY suggests a castle, mansion, bunker, and mine.
Here are a few:
-Ever played Morrowind? Try rebuilding "Balmora", the typical 1st big town you enter.... or Sotha Sil's clockwork building. The latter one may be a bit of a challenge, but very much worth the effort IMO.
-How about a giant tree, like from Avatar? Plant a tree, then put dirt blocks above that tree. Plant a tree on those blocks, and replace the dirt block with a tree block. You now have a giant tree. You can extend its branches out by putting dir blocks on the side, and putting a sapling down. Note that the tree may need contact with a torch or sufficient space if it doesn't grow. Extending on the idea, what if you plant a circle of trees? You can make a giant "hollowed" trunk using this method.
-Bioshock? Make glass corridors within an underwater canyon. Given enough room to build underwater, the opportunities are endless.
-make the Groveback creature from the "Darwin Expedition" book. It is a large turtle that grows a miniature forest on its back. It has two colossal-sized front legs, and drags a fin-shaped back leg though the dirt, making a large crack in the earth where it moves. Interesting book, really. I recommend reading it.
-Eiffel Tower? Cliche, sorry. Just throwing this one out there.
-How about making the AT-AT (giant 4-legged walking robot...and sp?) from Star Wars?
- Make a dam, complete with redstone contraptions that open and close water valves, and sends pretty light patterns throughout the machine. Obviously, its all for aesthetics...but It'd sure as hell look cool.

Really good ideas, but I've only play Skyrim, and I'm about to get Oblivion.
Also you could build a waterfall.
Im currently building 2 mini castles not for looks but for castle wars with my friends if you havent tried it its real fun 4 v 4. These mini castles get built in 1 day theyre so much fun to play in 2 archers and 2 swordsman on each team protecting a chest full of w/e on each side first one to capture the item and put it on top of their castle wins.

Off-topic:
I definitely recommend buying Morrowind first, if you can. Its a true gem for its time, and IMO it has more content in it than Oblivion and Skyrim (but maybe not put together). The loot was hand-placed, not randomly generated. The lack of level-capping also allows you to build your character into a demigod. It was made back in the days where you couldn't just slap an incomplete game on the shelf, and update it regularly as you continue working on it. Good luck finding the game, though. You would probably have to buy it on ebay, or something of the sort. Also, go for GOTY edition. For the 5 extra dollars, you will be getting at least 40% more of a game.
On-topic:
Waterfall? I like. A lot. Make sure to make it BIG, so people can see it from miles away and use it for a landmark. Also, how about a "secret" house that is under the lip of that waterfall? You can have streams of water running over the front balcony. Taking advantage of the position, you can even add some sugar cane or wheat along the edges where some water can funnel to it.
Also, when you find your first monster spawner/ dungeon (it is a burning, spinning pig inside of a blue cage block) make sure to save and quit. You then reload on a difficulty (if not, already) to see what monster spawns from that block. I made a "zombie town" arena using zombies from the spawner block.
