A skyscraper, a house (preferably modern), a rollercoaster, an Aztec temple, a factory, a rave warehouse, a couple ellaborate traps using redstone, an igloo, a castle across from your castle (for castle wars), an arena, and some pixel art.

That list should keep you busy for awhile.
