Kill them with your fist or arrows. Using swords (and maybe tools?) can cause an overflow of damage, which kills the slimes instead of causing them to split. This should be fixed in a later update.
Ive killed many slime but the large and mediums dont split into smaller slimes?!
Punch punch punch your way to them. They'll divide at a much quicker rate. Sometimes they might not divide at all, but using any other weapons (or even holding onto a block) can ruin your chances.
