The question is, wil MC360 ever catch up with the PC version.
After 1.25 MC360 will take it's own path. Because this is not minecraft on the xbox. This is Minecraft: Xbox 360 edition.
A pattern we've had was like this:
Month 1: Release
Month 2: Bug fix
Month 3: Title update
Month 4: Bug fix
So, every 2 months we get a title update, therefore we will have 1.25 by november and we will start going our own direction.

Yes, it WILL catch up to the PC version but not now, let's say by the end of this year....

1.2.3 is after 1.8.2. Not 1.2.5. Which means we still need 1.2.5, and now 1.3. As of right now they are not going their own way, they are still playing catch-up.

Haha I hope they spend more time fine-tuning everything as opposed to giving us random features not seen in the PC version. I mean, I could understand a few new blocks/items if they were useful, but there's certainly a line to be drawn somewhere.

I dont thing it will be the exact same but I do see it having amazing updates and maybe its own kind..

Do you happen to have a link for that, besides their quote of this not being a direct port, as that doesn't say anything about what you are saying? The only thing I have heard is that they will be going to 1.2.3 and beyond. I have seen nothing stating we will NOT be getting 1.3.
At this point, it looks like they are racing to version 2.0

The fact the the world size isnt going to change, means the answer is no
There is still a chance world size could increase. But yes, to answer OP since you didn't define what you meant by par, the Xbox 360 will never have infinite worlds, so it can never be on par with the PC version.
We are not in beta. We have the official release of Minecraft Xbox 360 Edition which is near-equivalent to 1.7.3 Beta PC version.
