You will need a new world for the terrain generation changes, such as villages, abandoned mineshafts, and ravines, unless you have unexplored areas on your map. You won't need a new world for new items.

Oh good I have un explored areas on my map quite alot as a matter of fact
Will we have to make a new world to use the changes?! And if so is there any way to duplicate worlds?
There's no way to duplicate your world. I dont believe 1.7.3 seeds will be the same for 1.8.1 either since we'll have things such as Swamps and the like
To get the new (most) items, mobs, craftable blocks, and general game mechanics (sprinting, hunger, sound effects) will not require you to start a new world. However to experience the new terrain changes you will need to start a new (if you have already explored your whole world). No, there is no way to duplicate your saves I believe.
As I understand it, unexplored areas still won't include new stuff. The entire world gets generated from the start on the 360.... so it's time for a new world.

Actually, unexplored chunks can still load updated terrain generation rules, e.g., worlds that were created before the first patch update (before 1.7.3 update) had a chance to spawn clay at normal rates in previously unexplored chunks.

NPC villages, new seed/landscape generator, mine-shafts, ravines, rivers, swamps, and more.
