I am a PC and Xbox gamer, on both which I play Minecraft on. I really like the PC style crafting where you have to know all the recipes and was hoping they could add an option which enables that in the settings on the Xbox version. I think that will make the game more enjoyable for those for those who prefer the PC style rather than the nooby Xbox style crafting.

I'm tired of people calling the Xbox crafting "nooby". The PC crafting isn't, in any way, "pro". The only way people on the PC figured out how to craft stuff is from either looking up videos or going to the wiki to see the recipes. 4J decided to save the Xbox crowd from having to go on the internet to see how to craft things.
I have both versions and played PC Minecraft a long time before I ever got in on Xbox and I much prefer the Xbox crafting it's easy and intuitive as well as saving a ton of time because you don't have to place every item individually. I mean really think about how much time you waste crafting in the PC version.
No. It's hard enough moving items around and stuff with the analog stick.
You can use the d-pad to move the cursor around in the inventory, for crafting, putting stuff in/from the furnace, etc. Way easier and far more precise than using the stick.

Is it a chicken or is it a duck? - It's a chuck, because dicken sounds stupid.
