It s full, doesn't have lava running into it, has lava running out of it, etc

The only surefire way to tell is if you can scoop it up in a bucket. Lava that is midstream is guaranteed to not be a source block, obviously, but the source of a flow also has a flowing animation. Lava that is sitting still and level is always a source block.
Lava lakes are made of several source blocks filled into an empty space. If you can collect flowing lava, you're actually collecting the still source block under it.
yep lava is like water (except you cant make a infinity lava pool) you will find a lot of lava pockets filled with multiple lava source blocks (in the worst spots most of the time) so

All my things cannot be at once, Per say, a lava source block can be full, a lava source block can be and running, a lava source block doesn't have lava flowing into it

How did you find so much lava? I thought of that to but it seems impossible to find that much lava
Lava is much more common deep below caves. Try searching there. It could also be the seed you're using doesn't have as much lava as others. Or you could build a Nether Portal and go in to the Nether, where there is seemingly an infinite amount of lava. Do be cautious though, as it is a dangerous place.
