In order to stop mob spawning, I generally lay down a crap load of torches all over the place. What I usually end up getting is a mess. I need to stop monster spawning in an area of approx 120 x 70. How could I lay down the torches in a way that would use only the minimum amount of torches and still do the job?
You could use 0 torches by placing glowstone, jack o lanterns... Or lava...

A cool trick I do is anywhere where I have a painting, I put glowstone behind it. So basically you place the painting on glowstone which hides the glowstone. The light from the glowstone shows through the painting

The torches only give off light for a limited amount of blocks and it's pretty weak light. You could make a row of torches and proceed outward from there skipping a row in between where you place them. But no matter what I think you will need alot of them I have to do the same thing
Assuming flat ground, keep in mind torches have light level 14:

Mobs spawn below light level 8, so a gap of 11 between 2 torches is most efficient, once again this is on flat ground. The best thing to do would be putting down the rows of torches, like this:

Assume there is an 11 gap space between the first and last row. I just showed it as 3 so I wouldn't have to type the whole thing out. Basically you will put a torch in the middle of the "box" of torches to keep the light levels between the rows above level 7.

I want to light the area around where my wife and I are builspawning prevent hostile mob spawning in our immediate area. So I guess what I am trying to do is make it safe to go outside in our immediate area.

Its outside so its presumably not for no reason.
I would personally build a cactus wall around the area also if you are outside of course (if you havent already) as mobs can still wonder in to the area.
what i did was build an unnecessarily high wall around the grounds that i wanted to build in, then went crazy with the torches and just put them everywhere. At night i went around and placed more in spots I missed and took out the ones i didn't need. Don't be shy with the torches, charcoal is an renewable resource!
I dig a hole two blocks down. Then I fill the bottom with a lava block and put a glass block on top of that. It gives off decent amounts of light, I wont fall into it and it doesn't look that bad either.
why not make streetlamps with fences and torches/glowstone? just stack a few fences and pop a block on top with torches on the block or glowstone.....there now it will look nice.
What Damien4004 posted is the best solution so far. However, another solution is to simply place down two beds and go to sleep at dusk. Monsters won't spawn until some time after sunset, so going to sleep early enough prevents any hostile mobs from spawning. As long as there are no caves nearby from where monsters can emerge, you'll be perfectly save.
The easiest solution, of course, is to simply play on peaceful for the time you're building.
