Common things I see in obstacle courses are having to leap from ladder to ladder, jumping from one stone block to another while you're 50 feet in the air (add lava for super dramatic effect) and pressure plates that trigger arrow-flinging dispensers.

In one world I had this huge mineshaft, very open, and I created a kind of do it your way parkour course working its way to the bottom from the top. I had endless amounts of Fun on that
It was composed of things like 2 block leaps to a wall with a ladder on it, climb the ladder and jump to your left and ninja kick your friend off the side of a cliff! o:<

With the pressure plates put rows of them down but only link some to the arrows. Combination locks seem populate. Levers to doors in different rooms to open doors. There are a few maze puzzles you can build too.
