Ok, so first of all, I am 1 level above bedrock, in a slime chunk.
Its lit up well. Some torches on the ground, and I used the tool found in the Sllimes 101 thread. No slimes have spawned.

did you light up all the cave around your slime area? are you waiting 24 blocks away? is your ceiling 3 blocks high (I think thats the minimum for lage slimes)? Take the tourches off the ground, they take up 1 block worth of space, thus redusing the area that slimes can spawn in. Make a hole in the ceiling and put a tourch in there.
...which works great, but there's one thing I've noticed about it.
Ever watch the sun? In relation to the map? On the PC, the sun rises in the East (map right) and sets in the West (map left). On the 360, however, the sun rises at the top of the map, and sets at the bottom. It's like the relationship is rotated 90 degrees counter-clockwise. Ergo, you can look at it like the sun rises in the North on the 360, or that the map has East at the top of it.
Either way, you have to take this into account when using the slime finder. I used it centered on one of my deep mines after randomly meeting a slime, and found 4 (!) slime chunks right next to each other in a kind of "dog leg" configuration. Problem was, slimes only spawned in one of them once I cleared them out.
As I continued to strip out more of the lower mine, slimes showed up... I went back to the spawn-finder, and sure enough, it was accurate... if you take into account the weird 90 degree rotation that they did on Xbox (for some unknown reason)
If you used the slime-finder utility, this might be the issue... you might be in the wrong spot. Start opening up all the chunks around the one you're in, and I'll bet you'll getcha some!

I'm not so sure about that sun thing, i used that same slime finder thingy and slimes spawn in the places it it says they do. I dug out one 16x16x3 at bedrock and i have never had trouble getting slimes.

Well, that's how it seemed to work out for me. Until I rotated that funky "L"-ish shape and dug it out in the mine, I only got slimes in one corner of the 'farm'. Now they're popping up all over the place.
It is odd, (isn't it though?), that they changed the orientation of the map on Xbox.

that is quite strange. i dug out a double chunk not to far from my first one and it also spawns slimes like crazy. I wonder who is wrong hahah (no sarcasm)

Well, revisit the spawn-finder and compare it, both normal orientation and rotated, and see what matches up. It'd be interesting to find out. If I'm wrong, then the slimes I'm seeing must have moved from another spawn area... but if I'm right, then your secondary slime-spawn will line up (more or less) with the spawn-finder map when rotated 90 degrees.
Well, revisit the spawn-finder and compare it, both normal orientation and rotated, and see what matches up. It'd be interesting to find out. If I'm wrong, then the slimes I'm seeing must have moved from another spawn area... but if I'm right, then your secondary slime-spawn will line up (more or less) with the spawn-finder map when rotated 90 degrees.

I must have quadruple checked each corner of each chunk when i was digging everything out, to make sure i was in the right place. I will check again though.

well damn. i was going to make a slime pet like some other guy did on here but it would be pointless since they despawn. i thought maybe they didn't because you sometimes see them on peaceful.

Yeah they despawn at the distance as been said. They dont despawn from switching difficulties to peaceful though.
