what me and my friends did to get the achievement is we dug a 2X2 hole about 20 blocks deep underneath a pen we had a pig in and when one of us saddled and got on the pig someone else would break the ground underneath the pig....
*note that with this method if you ride the pig down the hole you should take a stack of dirt or something to build out of the hole with.
As for the saddle..... we got pretty lucky and each found a separate spawner in each of our worlds that had a saddle.
I need this last achievement to complete it.
