I connect them to each other, to levers, to buttons, etc, but they all remain on, all the time.

When replicating the contraption at 1:33 in this video, the redstone torch on the left ALWAYS stays on. How is this possible? It's supposed to INVERT the charge sent from the pressure plate, but instead, the positive charge goes right through it...
