What I don't understand is if you can find clay at the bottom of oceans. Like say you already explored that part of the map. Can't you still go deep under the ocean and find parts of the seabed that you haven't "Explored" yet?

No, once you have generated a chunk, every block has been created, from bedrock to sky level. Even if you haven't seen it for yourself, if you have generated the land, it won't be there.
If you have explored a chunk at any level, the whole chunk has been generated, so whether you have been to the bottom of the ocean or just swum across the surface, the chunk has been generated. If you can se an area on your map, its been generated.
Always wondered exactly what a chunk was... So if that means I find slimes in one area they will be in a 64x64 area?
